Bunlardan bazlar tketicinin gelir seviyesinin durumu, etin fiyat ve tketici tercihleri olarak sralanabilir. Buna ek olarak tketici alkanlklarnda, blgenin sosyal ve ekonomik yapsnn da etkili olduu sylenebilir. Et retimini artrmaya ynelik abalarn yannda, tketicilerin et tketim alkanlklarnn da belirlenmesi byk bir neme sahiptir. lkemiz nfusu hzl bir ekilde artarken, beslenme iin kullanlan kaynaklarn da ayn ekilde artrlmas, verimli bir dzeye getirilmesi ve deerlendirilmesi zorunludur. Bu almada, stanbul ilinde 100 adet hanede et ve rnlerinin tketim profillerinin belirlenmesi, tketim alkanlklarnn ve tercihlerinin et ve rnlerinin mikrobiolojik kalitesini nasl etkilediinin ortaya konulmas ve tketici sal asndan olas risk faktrlerinin aratrlmtr. almamzdan elde edilen sonular eliinde tartlan veriler, et ve rnlerinin mikrobiyolojik kirlilik derecelerinin ve ierebilecei potansiyel risk faktrlerinin birincil derecede tketicilerin tketim profilleri, sosyo ekonomik durumlar, tketim ve satn alma alkanlklar ile ilikili olduunu gstermitir.

THE EFFECT OF CONSUMPTION OF RED MEAT AND MEAT PRODUCTS ON MICROBIOLOGICAL POLLUTION IN ISTANBUL
 
Meat is defined as one of the most important nutrient for human nutrition from the beginning of human civilization. There are different factors in our country that affect the demand and consumption of meat and its products. Some of them can be defined as the prices, preferences of the consumers, and the income levels of the consumers. Additionally the social and the economic status of the regions that the consumers live in are also the importnant factors of meat and meat products consuming profile. Because of the reasons explained above, determining the consuming profiles / habits of the public are important. To determine the correct policies about the meat sources for satisfying increasing population is compulsory for healthy generations and public. In this study it was determined the consumption profile of 100 houses in stanbul and how the preferences of the public effect the microbiological quality of the meat and products consumed by the public. According to the results we got, significant differences were determined among the potential microbiological risk factors and the consumption profiles, economical status and consumption habits of the consumers.
